Banana Cream Pie with Caramel Fudge

BANANA CREAM PIE with CARAMEL FUDGE

Pastry:
1 pack                 MAYA Complete “Quick n’ Easy” Hotcake Mix 200g
1 tablespoon     cocoa powder
4 tablespoons   water

Filling:
1/4 cup               sugar
3 tablespoons    MAYA Cornstarch
1 1/2 cups          evaporated milk
1 piece                egg yolk, slightly beaten
1 tablespoon     butter
1/2 teaspoon    vanilla
3 pieces              ripe banana (lacatan), sliced into rounds

Caramel Fudge:
1 cup                  whipping cream
2 tablespoons       powdered sugar
3/4 cup               sugar
1/2 cup               softened butter

Preheat oven at 400°F/ 205°C.

Combine MAYA Complete Hotcake Mix with cocoa powder. Add water, one tablespoon at a time, enough to form a ball of dough. Roll out to 9-inch pie plate. Bake until golden brown. Cool. Prepare filling. Combine sugar and cornstarch. Gradually stir in evaporated milk. Cook over double broiler stirring constantly until mixture thickens. Remove from heat. Gradually stir half of the mixture into the beaten egg yolk. Put back in saucepan and blend. Cook until mixture coats spoon. Blend in butter and vanilla.  Cool.

In a bowl, whip half of the cream with powdered sugar until stiff. Chill. In a saucepan, caramelize sugar in low heat then add butter and remaining all purpose cream.

To assemble: Layer half of banana into pie plate – pour the filling. Arrange remaining half of banana and cover and drizzle caramel fudge. Decorate with whipped cream if desired.

In a couple of days, we’ll be celebrating Father’s Day. If you’re thinking of what you can give, or do, for the man of the house, then why not surprise him with breakfast in bed?   You can try this simple but special dish to make his special day much more special.

Eggs Benedicts Style with Smoked Salmon

EGGS BENEDICTS STYLE w/ SMOKED SALMON

Pancake:
1 pack                     MAYA “Think Heart” Whole Wheat Pancake Mix 200g
1 piece                    egg
2 tablespoons         oil
3/4 cup                   water

Poached quail eggs
Smoked salmon
Hollandaise sauce, prepared

Prepare pancake mix as per package direction.

To assemble:

Lay 1 cooked pancake onto serving plate, top with sliced salmon, poached egg and hollandaise sauce. Sprinkle some chopped parsley for garnish. Repeat procedure with the remaining pancakes & toppings.

Phil Younghusband is the new face of VitPOWER. The Azkals player took some time off from the field to grace a press conference last week where he was launched as the brand’s celebrity endorser .

During an interview, Phil said that he is “happy to be part of the RFM family” and hopes that he can help the company in further spreading the good benefits of VitPower among young achievers like him.

The young footballer says he feels blessed that he got to endorse a highly-esteemed brand like VitPower and feels that help could contribute more to the brand. Phil also expressed excitement about the tours and activities that he will be doing with VitPower sometime this year.

Oliver Tolentino’s RIIR MaKULAY Collection

A couple of weeks ago, I was invited to the launch of the latest RIIR collection in Greenbelt 5.  The show launched the latest RIIR bags designed by couture fashion designer, Oliver Tolentino.  I brought my cam with me so I could take some snaps of the models walking down the runway.

CARA Welfare Philippines Re-launches Website

 

CARA Welfare Philippines was established in 2000 by a group of animal lovers determined to improve the lives of street animals here in the Philippines by the Spay/Neuter method to control the fast growing population. As it nears its 12-year anniversary as a non-profit organization, CARA aims to help even more animals through their low cost Clinic in Malate as well as their Adoption, Education and Trap Neuter Return Programs.
As part of CARA’S continued growth, they are re-launching their website in an effort to make CARA more visible in mainstream media and society. Their new site will be easier to navigate, as well as be more informative, visually appealing and intimate. In depth information about the organization’s programs and events, as well as stories about rescues, will be accompanied by photos and updates. The newsletter will provide the latest news on their activities, events, health and medical tips as well as our featured animals up for adoption.
