Chef Gene Gonzalez will be the guest chef for The Maya Kitchen Culinary Elite Series on February 6, Saturday, 9am-1pm.

Chef Gene will demonstrate and share his recipes for Adobo del Diablo (Capampangan Adobo) with a deep bronze produced by constant simmering and deglazing of the pan with stock when a crust is formed; Menudo Sulipeña (Oxtail Stew), slow simmered dish of oxtail, ham and Chorizo Bilbao with a dash of brandy; Pato Al Caparas (Duck with Capers) is simmered and braised duck with ham, liver and capers; Pasta Juan, chewy and buttery coconut bars; and Princess Cake, layers of freshly baked butter cake iced with buttercream with peach and strawberry puree and a ‘secret’ dose of Cointreau and coffee.

Master the art of cooking and baking with these classes at The Maya Kitchen this January.

Learn how to make Filled Cupcakes on January 23, Saturday, 9am-2pm. Learn to bake Chocolate-Filled Chocolate Oatmeal Cupcakes, Lemon Curd and Blueberry Cupcakes, Quezo de Bola Chiffon Cupcakes and Coffee Caramel Cupcakes. The fee for this hands-on class with group workshop is P1,500.

Basic Culinary is from January 26-29, Tuesday to Friday, 9am-3pm. The class teaches Cooking Fundamentals and International Standard Techniques of meal preparation from soup, salad, pasta, main courses to desserts for Home and Institutional Scale Kitchens.
