“Revisiting Pinoy Classics” by Chef Tatung at The Maya Kitchen

Chef Tatung brings us back to the kitchen of old with well-loved Filipino dishes on June 25, Saturday, 10am-2pm at The Maya Kitchen Culinary Elite Series.

Chef Tatung will demonstrate Ukoy-a Malabon favorite of shredded vegetables and shrimp coated in light annatto infused batter, deep fried to a golden crisp fritter; Pancit Pusit, a classic Caviteño dish, also known as Pansit Choco En Su Tinta-rice noodles bathed in rich squid ink sauce, topped with vegetables, crushed chicharon, squid rings and slices of kamias; and Classic Molo Soup-meat dumplings wrapped in thin wanton wrappers, swimming in a rich chicken broth with shredded chicken and shrimp, garnished with fried garlic and scallions.

He will also prepare Lechon Belly, a rolled pork belly lechon stuffed with the flavors of Cebu; and for dessert, Special Cassava Bibingka made more special with the addition of nata de coco, kaong and shredded young coconut, topped with a sweet yema-like glaze.

A chef, restaurateur, author, columnist and culinary heritage advocate, Michael Giovan Sarthou III or more popularly known as Chef Tatung grew up in Cebu where his grandmothers inspired and nurtured his love for cooking. He has shared his cooking expertise in numerous cooking shows, writes a column for Food Magazine and was a speaker in the recent Madrid Fusion 2016. He launched his book “Philippine Cookery: From Heart to Platter” in April of this year.

The Maya Kitchen’s June 2016 Courses

This June, The Maya Kitchen has just about everything for everyone.

Lifestyle Classes include Pizza Making on June 4, Saturday, 9am-2pm with recipes on vegetarian, meat-lovers and stuffed crust pizza. Class fee is P999. The Pate Choux class is also on June 4, Saturday, 9am-1pm with recipes on  eclairs, cream puffs, profiteroles and croquembouche. Class fee is P1,199.

Cupcake Baking and Decorating is on June 11, Saturday, 9am-1pm with recipes for peanut butter and chocolate chip, coconut marshmallow, strawberries and cream and cinnamon with cream cheese frosting. Class fee is P2,000.

Beginner’s Cookery Weekend is for the newbie in the kitchen. Session 1 starts on June 11, Saturday, 9am-1pm with a focus on bread and pastry making. Session 2 is on June 18, Saturday, 9am-1pm with simple homemade soups and cooking with meat and fish.  Session 3 is on June 25, Saturday, 9am-1pm with the perfect roast dinner and simple desserts. Each session costs P2,000.

Certificate Courses include Basic Baking on June 7-10 and June 21-24, both from Tuesday to Saturday, 9am-2pm. The class includes basic baking techniques applicable to small and commercial scale production of recipes and formulations of quick breads, pies, cookies, cakes and other bread varieties. Fee is P8,000.

Basic Culinary is on June 14-17 and June 28-July 1, both from Tuesday to Saturday, 9am-3pm. The class includes cooking fundamentals and international standard techniques of meal preparation from soup, salad, pasta, main courses to desserts for home and institutional scale kitchens. Fee is P9,000.

Kids and teens get another chance to cook and bake this month with Kids Baking Adventures. Kids 5-12 years old can attend Cupcake Baking and Decorating on June 8 and June 22 both on Wednesday, 9am-12noon. Cookie Baking is on June 9 and June 23, both Thursday, 9am-12noon. Fee for each class is P1,000.

Young Bakers Hangout
is for teens 13-18 years old. Basic Cakes is on June 15, Wednesday and Basic Icing is on June 16, Thursday. Fee for each class is P1,500.

Commercial Breads 1 is on June 29, Wednesday and Commercial Breads 2 is on June 30, Thursday. All classes are from 9am-12 noon. Fee for each class is P1,500.

The Maya Kitchen Culinary Elite Series presents Chef Julian Koeberl of L’ Aubergine on May 28, Saturday, 10am-1pm. Chef Koeberl will show guests what he calls ‘Creative European Cuisine’ in a line up that includes: Scallop Ceviche, fresh scallops cured in wasabi-citrus vinaigrette; Duo of Tomatoes, a salad of fresh tomatoes and tomato confit; Grilled Puma Iberico, premium cut of Iberian pork, grilled and served with herb salad, mashed potato and truffle sauce; Crispy Skin Amadai, fish fillet with crispy-fried scale; and Malakoff Bar, an Austrian dessert of rum, cream, lady fingers and coffee-vanilla crème anglaise.

A buffet lunch featuring the above dishes follows the demo.

Chef Koeberl is a native of Austria. He has had extensive culinary experience working in hotels and restaurants in Europe including stints under James Beard Award winning Chefs Alain Ducasse and Joel Robuchon. He was leading the kitchen at Suite Hotel Risco del Gato in Costa Calma, Spain when it received the title TUI Gourmet Hotel and twice the title TUI Holly.
