Year End Classes at The Maya Kitchen
It’s your last chance to hone your baking and cooking skills as The Maya Kitchen presents two more exciting classes this month of December. Chef Kittin finished Associate of Science in Culinary Management from Daytona Beach College in Florida, USA and also took up further studies at the Culinary Institute of America. She is a partner at the Cookbook Kitchen where she also manages the catering division.
On the same day at 2-6pm, Manju Abichandani conducts a demonstration on Vegetarian Dishes Pinoy Style that includes exciting meals from meat substitutes like Sisig Adobo, Caldereta, BBQ, Pancit and Lengua.

Bravo Ristorante Italiano
It was a virtual trip along the famous piazzas of Italy as Bravo Ristorante Italiano whipped up favorite Italian dishes at The Maya Kitchen recently. Chef Edgar Nama deftly prepared buttery Risotto Bravo, creamy Raviolli Con Spinachi, velvety PannavCotta, fall-off-the-bone Osso Buco, thin and crispy Quattro Formaggi Pizza, healthy Minestrone Alla Milanese and rich Pasta with Tuna Tuscan.
Here are the recipes for two of the dishes he prepared: Osso Bucco and Pasta with Tuna Tuscan Sauce.
OSSO BUCO
250 g beef shank
13 g MAYA All Purpose Flour
5 g rock salt
.5 g pepper, black ground
28 g butter unsalted, for sautéing
85 g white onions, chopped
65 g carrots small, cubed
75 g potatoes, ½ cubes
13 g celery “chopped”
25 g Mushroom button fresh “sliced”
56 ml white wine
38 g tomato whole peeled, Capri drained
25 g tomato water
.5 g lemon rind
.25 g water
1. Pre heat oven to 325°F or 160°C.
2. Coat meat in flour, salt and pepper mixture.
3. Heat oil in heavy pan over medium heat, add meat and cook in high fire until all sides are brown.
4. In another stock pot, melt butter, sauté onion until transparent.
5. Add carrots, potatoes, celery, mushrooms & beef broth & cook over medium heat until vegetables are cooked.
6. In a separate stock pot put meat and wine and cover with lid and let it boil for 1 minute.
7. Add tomato whole peeled, tomato water, lemon rind & water, cook for about 30 minutes.
8. Remove from heat.
9. Transfer meat mixture and vegetable mixture in a baking pan and cover with aluminum foil.
10. Bake for 2 hours or until meat is tender.
1 bottle of BRAVO Tuna Tuscan Sauce
90 g pasta
20 g olive oil
30 g minced garlic
120g tuna in oil
anchovy pieces to taste
Ground pepper to taste
1.In a pan, heat the BRAVO Tuna Tuscan Sauce.
2.Mix in the pasta and serve. OR
Sauté in olive oil the garlic, anchovy and canned tuna in oil. Season to taste. Mix in the cooked pasta and serve.

Ador Interiors
One cannot help but marvel at the newly renovated Suite 309 of LRI Design Plaza, the urban design hub along Nicanor Garcia Street in Makati City. This 68- square meter space is the new home of interior designer’s Jigs Ranada Adefuin’s Adefuin Design Studio. This is also home to couture furniture line AdOR Interiors, a venture of Adefuin and business partner Oliver Ortiz.
Adefuin’s opulent taste and modern flair are easily likened to Filipino poet Jose Garcia Villa’s style of art-for-art’s sake, but intricately married with the down-to-earth functionality of excellent design. His creations exude a perfect balance of sophistication and purpose, of art and innovation.
The use of tempered glass for the walls not only creates an illusion of space and allow natural light to filter into the reception area, but it also draws guests’ attention to the imposing chandelier outside. The room hints of a contemporary East-Meets-West concept. This is conveyed through unique pieces such as the Victorian-inspired arm chair; Ming-style chair, Chinese console table, and an Ashwood center table with vibrantly-hued accessories that also highlights Arturo Luz’s “Palitana White Temple” acrylic on canvass.
The conference room features modern drop lights that illuminate a Ramon Orlina azure crystal sculpture, one of the key art pieces in the room. A sprawling marble table and built-in shelves for various accessories from Adefuin and Ortiz’s private collection create a functional appeal to the room which is intended for creative discussions with partners and clients. Next to the conference room is the employees’ and owner’s work stations, replete with artistically stimulating elements such as various books on art and design, symmetric Ashwood tables for the staff, and the rest of the Luz and Alcuaz collections.
I first got to see Jigs’ work on the show Urbanzone. One of the condo units he’s worked on was featured on the late night lifestyle program. I was impressed then and was impressed more when I personally got to see one of the units he designed (which I’ll talk about in another post). Seeing the new design studio only made the fact clearer that Jigs Ranada is one talented designer.
San Miguel Flavored Beers
In all my years of drinking (it isn’t as much as it might sound) I’ve had quite a few favorite brews. I like drinking beer from time to time and mostly I prefer ice cold San Mig Light and San Mig Strong Ice. One of my recent favorite is flavored beer. Earlier this year, San Miguel came out with flavored beer that has less alcohol content than the two mentioned above. It comes in 2 flavors, apple and lemon. The taste is reminiscent of a sparkling shandy that was quite popular in the 90’s. Between the two flavors, I like the apple on best. Ice cold ofcourse.
