super easy fresh fruit salad

Well the holidays are over and it’s back to work for everyone! Did you guys have fun? I sure did. Anyway, we equate the holidays with presents, vacations and parties. And with parties come lots of food. And where there’s lots of food, there is bound to be left-overs. Yeah, you guessed it. I’m talking about leftovers again. But not the kind you are thinking. I’m talking about left-over fruits.

I’m sure you have received at least one fruit basket over the holidays.And I’m pretty sure that up until now, some of you haven’t even gotten around to eating the contents. You probably used them to decorate your table or buffet, and ended up forgetting to eat the them. Or maybe you have in the fridge, which again, you have forgotten about.

 

Here is a very simple recipe to take care of those surplus fruits. I made some for dinner earlier. It was really good!

Super Easy Fruit Salad

Ingredients:

1 large fuji apple (any variety of apple is fine), peeled, cored and cut into small cubes
2 3-4 medium ripe bananas, peeled and cut into bite-sized pices
a handful of seedless grapes, cut in half (you may use the seeded variety, but you will have to remove the seeds)
about 1/2 a cup of fresh ripe pineapple, cut into small cubes
or
1 small can of pineapple chunks, well drained
2 tablespoons of fresh lemon, calamansi or orange juice
1/2 cup of all purpose cream, chilled
2-3 tablespoons of condensed milk

In a bowl, combine the apple and bananas. Mix in the lemon juice ( or calamansi or orange). The acid in the juice will prevent the fruits from discoloring. Set aside.

In a another bowl, combine the chilled cream and condensed milk. Mix until well combined. Add in all the fruits and toss until the cream mixture is evenly distributed. Chill. Serve in chilled bowls garnished with a sprig of mint. Best served on the day it is made.

Makes 4 servings.
