On March 23, Saturday, 9am-1pm, guest Chef Miguel Angel de Alba brings with him the well-loved Spanish cuisine of Alba Restaurante Español that has pleased the Filipino palate for several decades.
Chef Miguel will demonstrate Jamon con Mangga y Arugula (Homemade Spanish Cured Ham with Mango and Arugula Leaves); Croquetas de Bacalao (Salted Codfish Croquettes); Fabada Asturiana (White Beans with Chorizo, Jamon and Black Sausage); Lapu-lapu en Salsa Verde (Lapu-lapu Fillet in Light Green Sauce); Paella de Cordero (Lamb Paella) and Tarta de Limon con Quezo (Lemon Ricotta Squares).
The son of the respected Chef Don Anastacio de Alba, Chef Miguel did not right away found himself in the kitchen. As a young boy, he wanted to be a doctor, as a teen he got fascinated with numbers and ended up taking accounting. Only as a young adult did he finally found his true calling, that of following in his father’s footsteps and becoming a chef. Though father and son do not discuss it openly, Chef Miguel knows that this decision pleases his father immensely. Chef Miguel now oversees four branches of Alba Restaurante Español located at Polaris Street, Bel Air Makati; Tomas Morato, Quezon City; Westgate Center, Filinvest Corporate City, Alabang; and Prism Plaza, MOA Complex.
Another class on March 23 is Vietnamese Home Cooking, 1-5pm by Vietnamese home chef Bach Cuc Dorotheo. She will demonstrate Vietnamese Lumpia, fried (Cha Gio) and fresh (Goi Cuon), Rice Noodles with Beef and Lemon Grass (Bun Bo Xau Voi Xa), Chicken with Patis and Molasses (Ga Voi Nuoc Mam Va Nuoc Mau) and Pork Spare Ribs Barbeque with Lemon Grass and Pepper (Xuong Nuong Voi Xa Ot).
Other Lifestyle Courses include: Roast Grill and Salad, March 9, Saturday, 9am-1pm; Shawarma, March 9, Saturday, 1-5pm; and Maya’s Best of Baking Recipes, March 16, Saturday, 1-5pm.
Certificate Courses with hands-on include: Basic Culinary, March 19-22, Tuesday to Friday; Fundamentals of Bakery Production, March 12-15, Tuesday to Friday, 10am-3pm; and Restaurant Operation, March 15-16, Friday and Saturday, 9am-4pm.
