The Maya Kitchen’s Schedule of Classes For October 2011

This month at The Maya Kitchen: The Cookbook Kitchen!

Chef Patron Gen Capati of The Cookbook Kitchen will demonstrate some of his restaurant’s most popular dishes like CBK Stuffed Spring Chicken and Boston Poached Fish. He’ll also prepare crowd favorites Meaty Herbed Eggplant; Pasta al Adobo; and Decadent Chocolate Rhum Cake, a creation of Chef Capati himself.

Inspired by the concept of offering delicious meals in a cozy, homey and casual setting, Cookbook Kitchen had its first start in 2005, somewhere in Mandaluyong, in a garage and part of a residential house converted into a restaurant. Today, Cookbook Kitchen serves its loyal patrons in branches in Eastwood City and San Fernando, Pampanga.  Its small menu of very select dishes has grown to include Italian, American and Asian fusion offerings.

Demo fee is P1,500.00.

ONE DAY COURSES

SHAWARMA STYLE HALAL KABAB, October 1, 9am-1pm

BREAD-MAKING WORKSHOP , October 1, 9am-3pm
Ensaymada, Mongo bread, Bicho-bicho, Spanish Bread, Cinnamon Roll w/ lecture on commercial scale production using Baker’s Percentage P2,000.00

WEEKENDER CHEF’S WORKSHOP FOR KIDS (AGES 6-11), October 8, 9am-1pm
Halloween Chocolate Cupcakes, Mini burgers, Oven Baked Potatoes, Mac and Cheese, Four Season Fruit Punch P1,200.00

BARCHOW, October 15, 9am-1pm
Buffalo Wings ala Outback, Deep Fried Calamares w/ Red Aioli, Tater Skin, Baked Nachos w/ Salsa Cheese Sauce, Crab Claws, Hot & Spicy Chicken tails P1,750.00

FOOD CATERING, October 15, 9am-5pm
Legal and technical aspects to get started in the catering business. Menu, portioning, quantification (from small scale to volume production), cost control & HACCP on food, plus tips on preparation of low cost meals for catering. P2,000.00

PINOY HAWKER FOOD, October 22, 9am-1pm
Kwek-Kwek, Fish Balls, Squid Balls, Chicken Feet, Isaw including dip / sauce P1,500.00

PIZZA WORKSHOP, October 22, 9am-2pm
For home & commercial business – Lecture on technology of making pizza crust, toppings and sauces including portioning, costing and sales profit analysis. P2,000.00

COFFEE 101, October 22, 1-6pm
Coffee History, Coffee Process, Trouble shooting, Machine Know-how, proper grinding. Techniques to a perfect froth. Preparation of popular Coffee Concoctions: Espresso, Capuccino, Latte etc. P2,000.00

The Maya Kitchen still offers certificate courses that includes hand-on training such as: Fundamentals of Bakery Production, October 4-7 and 18-21, 9am-2pm; Basic Culinary, October 11-14 and 25-28, 9am-3pm; Basic Cake Decorating, October 21-22, 9am-3pm; and Barista, starts October 22, 1-6pm + 120 hours of on-the-job-training.

TESDA-registered course Breads and Pastry Production NCII, starts October 18, 9am-2pm, plus 250 hours of on-the-job training.
